Steaming the semolina , cooking instructions specific to the Maghreb region is not clearly dated. It seems it has grown up around the ninth or tenth century. they then used a terracota colander clay or wicker basket called "alfa".
THE MAIN COURSE:
Berber Couscous is a fabulous journey of discovery of the Berber culture. The durum wheat semolina was replaced by barley semoulina, and the classic broth is completed by milk.
YOUR MENU:
You will also work around the following dishes, all directly from the Berber cooking :
- seasonal vegetables soup,
- discovery the Berber pancakes "Bouchiar",
- a traditional dessert made from fruit or vegetable juice,
- detailed preparation for tea Mint.
The cooking classes are approximately 3 hours of preparation, and continues by sharing a meal in a Moroccan living room, and in respect of rites and customs of traditional Moroccan meal. The lunch or dinner will be for you a special time for further discussion about the art of living in Morocco.
Your workshop includes the following services :
- utensils and raw materials,
- guide spoken (Arabic French English) in charge of translation and good progress of workshop,
- tasting of the realized recipes which will be served to you in the Moroccan salon of your host,
- 5 sorts of traditional Moroccan spices,
- 3 recipe cards available in French or English.
